chore: 更新依赖版本并迁移至pnpm catalog管理

将多个依赖从固定版本号迁移至pnpm catalog统一管理，提升依赖一致性
移除未使用的UI框架依赖（element-plus、naive-ui、tdesign-vue-next）
为echarts添加冲突解决配置以支持特定版本需求
